Jerusalem artichoke can grow well in marginal non-farming lands. It meets Chinese national renewable energy strategy to produce bioethanol using the plant as raw materials. The fermentable sugar in Jerusalem artichoke is inulin, which consists of linear chains of D-fructose units in the β (2 → 1) position.Kluyveromyces marxianus is the best known yeast for inulin metabolism and for the study of ethanol production from Jerusalem artichoke by one step fermentation technology. However, the adaptability of the species in ethanol production environments is not better than the traditional ethanol fermentation species of Saccharomyces cerevisiae. We aim to develop a technology for bioethanol production from Jerusalem artichoke by S.cerevisiae.
