Inactivation and conformational changes of mushroom polyphenoloxidase (PPO) treated by ultra high hydrostatic pressure (UHHP) were studied by means of circular dichrosim, fluorescence emission spectra and sulphydryl groups detection.The results indicated that the mushroom PPO exhibited a significant decrease in activity after treated under pressures from 800 to 1600 MPa.Treatment of the mushroom PPO at 800, 1000, 1200, 1400, 1600 MPa for 1 min decreased the enzyme activity by 15.1%, 20.6%, 47.8%, 90.4% and 99.2%, respectivley.
