Polyphenol oxidase (PPO,EC 1.14.18.1) usually occurs in plants,fruits and vegetables,initiating an enzymatic browning reaction.In the last years enzymatic cross-linking of proteins has gained increasing interest in food technology.PPO has been used for in vitro cross-linking of several proteins like lysozyme,casein,whey proteins and ribonuclease.The aim of this work was to select a good original material for PPO appropriated for proteins cross-linking.From many kinds of fruits,vegetables and edible fungus,we selected two materials which contain very high PPO activity,i.e.agaricus bisporus and eggplant.
