In this paper,we studied the antioxidant activities of gelatin hydrolysates from aquatic products(GHA)(represented by fish skin and fish scale)and gelatin hydrolysates from mammalian(GHM)(represented by cattle skin and pig skin).Results showed that all gelatin hydrolysates have reduce power,scavenge DPPH radical and scavenge ABTS radical.And the antioxidant activity of GHA was higher than GHM.In addition,the results of yeild of peptides and contents of free amino acids had the similar results of the antioxidant acitivity.We also studied the amino acids composition of GHA and GHM,results showed that the composition of GHA and GHM were similar,but the content of some hydrophbic amino acids such as alanine,methionine and phenylalanine of GHA was higher than GHM.
