目的在确定食源性疾病影响因素基础上,建立2010年广州亚运会食源性疾病风险评估指标体系。方法收集2000-2008年广州市食源性疾病的背景资料和相关风险评估资料,应用经验判断、头脑风暴法、Delph i专家咨询法和风险矩阵法,确定风险因素指标、可能性指标、严重程度指标和风险等级指标。结果初步建立广州亚运会食源性疾病风险评估指标体系,确定6个一级风险因素指标,以及致病原的具体种类、高危食品、暴露人群特征、气候和地理、广州地区饮食文化与卫生保健能力、预防控制措施及效果等29个风险因素二级指标;并确定5个可能性指标、5个严重程度指标、4个风险等级指标。结论该研究所建立的食源性疾病风险评估指标体系对指导评估2010年亚运会食源性疾病的风险具有重要意义。
Objective To establish the index system of risk assessment of foodborne diseases in the 2010 Guangzhou Asian Games based on the determinants of foodborne diseases. Methods The background data and related risk assessment data of foodborne diseases in Guangzhou during 2000-2008 were collected and used to determine the risk factors, risk indicators and severity of the risk factors based on experience, brainstorming, Delphi expert consultation and risk matrix method Indicators and risk level indicators. Results The risk assessment index system of foodborne diseases in Guangzhou Asian Games was initially established. Six first-level risk factors were identified as well as the specific pathogens, high-risk foods, characteristics of exposed population, climate and geography, food culture and health care capacity in Guangzhou , Prevention and control measures and effects of 29 risk factors such as secondary indicators; and to determine the five potential indicators, five severity indicators, four risk level indicators. Conclusion The risk assessment index system for foodborne diseases established by this research is of great significance for guiding the assessment of the risk of foodborne diseases in the 2010 Asian Games.
