巧用茶叶及茶色素 茶叶,异名茗。主要产于四川、云南、江苏、浙江、湖南、湖北、江西、安徽、福建等地。用嫩叶或叶芽、干燥叶等卷曲碾碎的叶片,因加工方法的不同,有绿茶、红茶之分。绿茶显绿褐色,光整的叶片在热水中浸软后,可见到呈广披针形,先端尖,边缘有锯齿,上表面光滑无毛,下表面微有茸毛,干叶质脆易碎;红茶则多为卷缩的条形碎块,有的则呈弯曲的丝状,赤褐色或棕黑色。
