目的对1起食用路边烧烤店食物引发食用者出现发绀、头晕、呕吐等中毒症状进行调查分析,以查明原因,采取有效预防措施。方法采用现场卫生学调查、流行病学分析、实验室检测等方法。结果此次事件发病10人,罹患率58.8%,剩余鸭心、腌制鸭心、骨肉相连亚硝酸盐分别超过最高残留标准45、27、110倍,暴露因素为烤鸭心、烤五花肉、烤骨肉相连。结论根据流行病学调查、结合临床诊治和实验室检测结果,确认这是一起因食用亚硝酸盐污染的食品而导致的化学性食物中毒事件。
