看了1958年6月号“化学通报”刘绎如同志所发表的“潮州制蔗糖方法及糖的加工”一文之后,引起了我们的兴趣。刘同志这篇文章,写出了祖国人民在化学工业上的传统光辉成就。我们的家乡——潮州,到处都有土法制糖的糖寮。我们从小就跟上糖寮,对于制糖的方法是比较熟悉的。但现在由于知识水平的限制,对于土法制糖的某些问题还不能提高到理论上来解释。我们仅提供一些问题,让科学家们、读者们共同研究。另方面在制糖方法上也提出了一些补充,以供参考。
After reading the article entitled “Processing of Sucrose and Processes of Sugar in Chaozhou” published by Liu Yi Ru in the June, 1958 issue of Chemical Bulletin, it aroused our interest. This article from Comrade Liu has written the traditional glorious achievements of the motherland in the chemical industry. Our hometown - Chaozhou, there are sugar sweets sugar everywhere. We grew up with sugarloaf, sugar method is more familiar with. However, due to the limited knowledge level, some problems about indigenous sugar can not be theoretically explained. We only provide some questions for scientists and readers to study together. On the other hand in the sugar method also made some supplements for reference.
