七十年代以来,由于发现硒参与生物体重要的代谢活动,它具有保护细胞膜、提高免疫及抗癌的作用,因此引起科学界的广泛重视.我国人民膳食结构中硒含量低,补充食物中硒是提高人民体质、增强抗病力的重要途径.食用菌是美味保健食品,但硒食量只有0.0269~2.0315ppm,生产一种美食、营养和保健的富硒菌类是人们期望的.笔者于1989~1990年对有食药用价值的猴头菌富硒力研究,证明它有一定的富硒能力.一定浓度范围内的硒有增产作用.
