本文采用5—HMF含量作分解指标考查降温速度对葡萄糖分解的影响。结果表明①热压灭菌后采取迅速降温措施非常必要;②作5—HMF限量测定应注意取样位置的代表性;③无菌检查也应注意取样位置的代表性。④现有卧式消毒柜的设计应改进。
