In recent years, the fastest growing food market in the United States is self-care and functional foods. The sales of vitamins and herbal extracts jumped to 12 billion U.S. dollars. Energy drinks and powders reached US$3.14 billion. Antioxidants and high-calcium juices doubled faster than traditional products. Some large US food industry giants have spotted the therapeutic market and created foods such as low-calorie and anti-cancer functions.
