鸡蛋所含的营养物质 所有的禽蛋类(包括鸡蛋)都属于酸性食物。一个鸡蛋去掉壳和“内膜”(中药名称叫做“凤凰衣”)之后,在外面裹着一层厚厚鸡蛋白或称鸡蛋清,鸡蛋白是由三层成份组成的,其外层及内层都比较稀薄,而中层因含有0.3%粘蛋白,故而较为粘稠。每100克中约含有蛋白质10克,脂肪0.1克、碳水化合物1.3克(详见表1)。按水份和固形物所占比重,则含水份88%,固形物12%,固形物中大约90%是蛋白质,内有:卵蛋白质占75%,卵类粘蛋白占15%,卵粘蛋白占7%,伴白蛋白占3%。
