目的查明本次疫情来源,为院校饮食社会化保障的规范管理提供参考。方法现场流行病学调查,实验室检测,医院临床诊断。结果餐具消毒不合格;食品存放不符合卫生要求;食堂整体卫生状况较差;从留样食品中检出普通变形杆菌;4名学员有脓血便、里急后重症状。结论饮食保障单位过多考虑经济效益会降低食品卫生的质量和标准;如果监管不利,对饮食保障社会化采取包之了之的管理方式就容易导致饮食安全问题。
Objective To identify the sources of this outbreak and provide a reference for the standardized management of college social security of diet. Methods Epidemiological survey, laboratory tests, clinical diagnosis of the hospital. The results of tableware disinfection unqualified; food storage does not meet the health requirements; Poor overall health status of the canteen; from the sample-like food was detected in Proteus vulgaris; 4 students have pus and blood, tenesmus and severe symptoms. Conclusion Too much consideration of economic benefits will reduce the quality and standard of food hygiene. If the regulation is unfavorable, the management of the socialization of food security can easily lead to food safety problems.
