黄茶是我国的著名特产,按鲜叶老嫩又分为黄芽茶、黄小茶和黄大茶三类。黄芽茶是黄茶中以单芽(或一芽一叶)精制而成,其典型代表为蒙顶黄芽;而沩山毛尖、平阳黄汤等均属黄小茶;安徽皖西金寨、霍山,湖北英山所产的一些黄茶则为黄大茶。蒙顶黄芽为中国十大名茶之一,特级蒙顶黄芽采用明前全芽头制作,每公斤干茶需要8万至10万个芽头。蒙顶山区气候温和,年平均温度14~15℃,年平均降水量2 000 mm左右,阴雨天较多,
