花椒也称崖椒、蔓椒、地椒,又称秦椒。明代李明珍说:“秦椒,花椒也。始产于秦,今处处可种。”证明我国在两千多年前就种植花椒了。花椒属芸香料,灌木或小乔木。树枝上长满刺,奇数羽状复叶,边缘有圆齿和透明腺点。夏天开花,花小型,黄色。秋季结果,果实成熟后红褐色,果壳上密生粗大突出的腺点。种仁黑色,有光泽。如眼目瞳珠, 中药称之为“椒目”。花椒原野生我国秦岭一带,现各地普遍栽种,因四川多产,故又有蜀椒、川椒之名。
