目的了解深圳市盐田区食品中常见食源性致病菌的污染状况,为控制食源性疾病提供科学依据。方法2005-2008年采用随机抽样的方法,抽取深圳市盐田区的10个农贸市场、4家大型超市和8家餐饮单位销售的共8类食品,依据GB4789-2003中的方法进行沙门菌、单增李斯特菌、肠出血性大肠埃希菌O157∶H7、金黄色葡萄球菌、副溶血弧菌的检测。结果共检测8类食品共635份,在97份样品中检出致病菌,总阳性检出率为15.3%。各类食品均检出目标致病菌,检出率为11.5%~22.4%,检出率最高的为海产品和熟肉制品,分别为22.4%和19.5%。在检出的97株致病菌中,沙门菌49株,副溶血弧菌31株,单增李斯特菌11株,金黄色葡萄球菌6株,未检出肠出血性大肠埃希菌O157∶H7。结论深圳市盐田区居民主要消费食品存在食源性致病菌污染,其中海产品和熟肉制品等污染较严重,建议政府加强对食品生产和销售的管理,同时做好卫生知识的宣传教育工作,防止食源性疾病的暴发。
Objective To understand the pollution status of food-borne pathogens in Yantian District of Shenzhen City and provide a scientific basis for controlling food-borne diseases. Methods From 2005 to 2008, a total of 8 types of foods were sold from 10 farmers’ markets, 4 large supermarkets and 8 food and beverage establishments in Yantian District of Shenzhen City by means of random sampling. According to the method of GB4789-2003, Salmonella, Listeria monocytogenes, enterohemorrhagic Escherichia coli O157: H7, Staphylococcus aureus, Vibrio parahaemolyticus detection. Results A total of 635 samples of 8 kinds of food were detected. Pathogenic bacteria were detected in 97 samples with the total positive detection rate of 15.3%. All kinds of food were detected target pathogens, the detection rate was 11.5% ~ 22.4%, the highest detection rate of seafood and cooked meat products, respectively, 22.4% and 19.5%. Of the 97 pathogenic bacteria that were detected, 49 strains of Salmonella, 31 strains of Vibrio parahaemolyticus, 11 strains of Listeria monocytogenes, 6 strains of Staphylococcus aureus, and no E. coli O157: H7. Conclusions There are food-borne pathogenic bacteria in the main consuming food of residents in Yantian District of Shenzhen City. Among them, the pollution of seafood and cooked meat products is more serious. It is suggested that the government should strengthen the management of food production and marketing and publicize the hygiene knowledge , To prevent the outbreak of foodborne illness.
