[目的]对紫叶水稻突变体PLM品质进行研究,为紫色水稻的应用研究提供依据。[方法]以一种新发现的水稻紫色突变体以及与其组配的F1、F2为材料,测定其籽粒的粒型、垩白粒率、垩白度、千粒重、糙米率、蛋白质含量、直链淀粉含量、糊化温度、胶稠度等指标。[结果]亲Z的粒型1级,糙米率1级,垩白粒率、垩白度、直链淀粉含量和胶稠度均未达到1级标准;F2代籽粒变大、直链淀粉含量降低、垩白度和垩白粒率降低、胶稠度变软。[结论]亲Z品质指标多数未达到标准,但其F2代品质有所优化。
[Objective] The research aimed to study the PLM quality of purple leaf rice mutant and provide the basis for the application research of purple rice. [Method] With a newly discovered purple mutant of rice and their F1 and F2 combinations, the grain size, chalky grain rate, chalkiness, grain weight, brown rice rate, protein content, Starch content, gelatinization temperature, glue consistency and other indicators. [Result] The results showed that the grade 1 of the pro-Z grain, the grade 1 of brown rice, the chalky grain rate, the chalkiness degree, the amylose content and the gel consistency did not reach the level 1 standard. The grains in the F2 generation became larger and the amylose content decreased , Chalkiness and chalky grain rate decreased, gel consistency softened. [Conclusion] Most of the Z quality indicators did not meet the standard, but the F2 generation quality was optimized.
