发菜是一种名贵的菜肴。在港澳同胞和海外华侨中倍受欢迎,每逢新春佳节,亲朋好友团聚一起,一边恭禧发财(发菜的谐音),一边怀念故土,增添情趣。发菜有较高的营养价值,蛋白质含量高于鸡蛋和肉类,可达20%,含碘1%以上,并含有钙、铁、锰、磷等多种矿物质及维生素类。发菜还具有治疗高血压、妇女病等药用价值。发菜是我国的传统出口商品,一吨发菜可换回十五辆汽车。这种海外侨胞和我国南方人民喜爱的发菜,却生长在祖国的北方,主要分布于内蒙古、宁夏、甘肃、青海和新疆等地。内蒙古现为发菜的主要产区,产量占全国的60%以上。
