People’s concern about overnight tea is mainly due to the high nitrate contained within it, which once being reduced to nitrite by the airborne bacteria and taken excessively, will be poisonous. Does this make sense?
Tea is indeed with high nitrate content. However, commonly we put only 1 to 2 grams of tea. Calculating from the tea with the highest nitrate content, which is 300 milligrams/ kg tea, there is only 6 milligram/ 2 kg tea. Even if all of them are converted into nitrite, it is still far from the toxic dose. Therefore it is no need to worry about being poisoned.
