吴建明 1968年生人,高级烹调师,天津南市食品街开业之初的首批员工。从厨至今19年,擅长烹制鲁菜,曾师从于著名鲁菜大师张尚志。他技术全面,墩上干净利落,冷菜拼摆整齐,刀法精湛,灶上操作娴熟,对爆、扒、(火日羽)、烩、拔丝等技法有较深功底。他还喜欢粤菜,讲究“拿来主义”,只要是受顾客欢迎销路比较好的菜式,他都主张分析研究使其能更精美、更适口。在南市食品街工作期间,曾多次在街内青工技术比赛和天津市商业系统组织的技术考核中获奖,被评为技术能手和优秀厨师。他任厨师长多年,虽不善言谈,但对厨房管理工作思路清晰,人员安排有条不紊。无论业务多忙,厨房总是干净整齐,出菜快而有序,经常得到企业经理的夸奖。
