沙姜,又名山奈,多年生草本植物。根状茎块状,表面灰色,肉质,近圆形,径1~2.5厘米,连珠状或向四面八方横向丛生,近土面,周身密生多数须根。须根白玉色,肉质,径1~3毫米,长3~5厘米(如上图)。根状茎和须根都有芳香气味,根状茎尤其强烈。我国的台湾、广东、广西、云南以及南亚至东南亚热带地区多有野生或栽培。根状茎为芳香健胃剂,有散寒去湿的功用。在两广民间,吃白切鸡的时候,人们爱拿新鲜的沙姜洗净捣碎,配以麻油、酱油,做白切鸡的调味品。
Sha Jiang, also known as Chennai, perennial herb. Rhizome massive, surface gray, succulent, nearly circular, diameter 1 ~ 2.5 cm, Lianzhu or horizontal clusters in all directions, near soil surface, most of the body close to the fibrous roots. Beard white, fleshy, diameter of 1 to 3 mm, length 3 to 5 cm (as shown above). Rhizomes and fibrous roots have aroma, rhizomes are particularly strong. China’s Taiwan, Guangdong, Guangxi, Yunnan and South Asia to Southeast Asia more wild or cultivated. Rhizome aromatic stomachic agent, have the function of cold to wet. In the Guangdong and Guangxi civilians, eat white cut chicken, people love to take fresh ginger ginger mashed, with sesame oil, soy sauce, white chicken dressing.
