在食品安全问题中,人们对地沟油的关心程度远远高于其他。在对地沟油表达厌恶的同时,也透露出了人们对当前的食用油,特别是对餐饮服务业用油的不安心和不放心。地沟油具体分为哪几个种类?是怎么提炼出来的?有哪些危害?当前是否存在有效的检测方法?为此,笔者采访了相关专家。何为地沟油地沟油,一般是指餐饮业的废弃油脂,即餐饮企业和食品加工企业在经营生产过程中废弃的不能食用的油脂,主要分为传统地沟油和新型地沟油两类。
