为了研究料水比对桔梗多糖提取率及抗氧化活性的影响,试验对桔梗多糖(热水浸提法)的多糖提取率、总还原能力和清除羟自由基能力进行测定。结果表明:料水比为1∶20时,多糖提取率最高为33.43%;各个料水比条件下,总还原能力和清除羟自由基的能力与桔梗多糖的浓度呈量效关系,其中多糖浓度为13 mg/m L时抗氧化能力最强。总还原能力由大到小依次为1∶20>1∶30>1∶40>1∶10=1∶50;清除羟自由基的能力由大到小依次为1∶30>1∶20>1∶10>1∶40>1∶50。综合各因素考虑,1∶20为桔梗多糖提取的最佳料水比。
In order to study the effect of material to water ratio on the extraction rate and antioxidant activity of polysaccharides from Campanulaceae, the polysaccharide extraction rate, total reducing ability and hydroxyl radical scavenging ability of Campanulaceae polysaccharide (hot water extraction) were tested. The results showed that the highest extraction rate of polysaccharides was 33.43% when the ratio of material to water was 1:20. The total reducing ability and the ability of scavenging hydroxyl free radical were positively correlated with the concentration of polysaccharides, Antioxidant capacity was the strongest at 13 mg / m L. The total reducing ability descending order of 1:20> 1:30> 1:40> 1:10 = 1:50; ability to scavenge hydroxyl radicals in descending order of 1:30> 1:20> 1 : 10> 1:40> 1:50. Taking all factors into consideration, 1:20 is the best ratio of water extracted from Campanulaceae polysaccharide.
