[目的]分析厦门市岛内具有一定规模餐饮单位的食(饮)具消毒状况,便于卫生监督和干预。[方法]2010~2011年在厦门岛内选择一定规模的酒店116家、酒楼78家及西餐厅38家,对其食(饮)具检测大肠菌群。[结果]2010~2011年合计检测232家餐饮单位,4 590份食(饮)具,大肠菌群阳性的984份,阳性率为21.44%。酒店(中餐厅)阳性率为20.39%、酒楼为27.87%、西餐厅为11.71%,差异有统计学意义(P<0.01)。[结论]厦门岛内的具有一定规模的单位食(饮)具消毒状况以西餐厅(含酒店中的)最好,酒店中餐厅次之,酒楼中餐厅最差。卫生监督和干预的重点应是中餐厅。
[Objective] To analyze the disinfection status of food (drink) with a certain scale catering unit in Xiamen Island, which is convenient for health supervision and intervention. [Method] A total of 116 hotels, 78 restaurants and 38 western restaurants were selected in Xiamen Island from 2010 to 2011 to detect coliform bacteria in their food and drink. [Results] The total number of 232 catering units, 4 590 servings of food and drink, and coliform bacteria positive were 984 from 2010 to 2011, the positive rate was 21.44%. The positive rate of hotel (Chinese restaurant) was 20.39%, restaurant was 27.87%, restaurant was 11.71%, the difference was statistically significant (P <0.01). [Conclusion] There is a certain scale in Xiamen island food (drinking) with Western disinfection of the restaurant (including the hotel) is best, followed by the hotel restaurant, restaurant worst restaurant. Health supervision and intervention should focus on Chinese restaurant.
