以山葡萄新品种‘北国蓝’果实为试材,对各采收期的果实及其原酒的理化指标进行测定,研究不同采收期对果实品质及其酒质的影响。结果表明:不同采收期对‘北国蓝’的果实品质有明显影响,随着采收期的延迟果粒直径、平均粒重、平均穗重、出酒率、总糖含量均呈先升高后降低的趋势;果实总酚、单宁含量持续增加,较第一次采收分别增加了27.94%和92.50%;滴定酸含量无规律性变化,但10月5日含量最低(18.27g/L),各不同采收期差异显著。不同采收期果实酿造的葡萄酒滴定酸含量与果实滴定酸含量呈极显著正相关;葡萄酒总酚和单宁含量与果实总酚和单宁含量均呈显著正相关。果实品质和酿酒特性分析表明,‘北国蓝’在当地最佳采收时期为9月30日至10月5日。
The new grape variety “Northern Blue” was used as test material to determine the physicochemical properties of the fruits and their original wines during the harvesting time. The effects of different harvesting dates on fruit quality and wine quality were studied. The results showed that the harvest time had a significant effect on the fruit quality of ’Beiguolan’. The fruit diameter, the average grain weight, the average ear weight, the wine output rate and the total sugar content all increased first with the delay of harvest time The content of total phenols and tannin in fruit increased continuously, which increased by 27.94% and 92.50% respectively compared with the first harvest; the content of titratable acid had no regular change, but the lowest content was on October 5 (18.27g / L ), The difference of different harvest time is significant. There was a significant positive correlation between titratable acidity and titratable acid content in the fruits harvested at different harvest times. There was a significant positive correlation between total phenolics and tannin contents and total phenolics and tannin content in the fruits. Analysis of fruit quality and brewing characteristics showed that the best harvesting time of ’Beigu Gu Lan’ was from September 30 to October 5.
