栽培环境明显地影响小麦蛋白质含量和蛋白质产量.氮肥的增进效应最大.过量施用磷肥会降低蛋白质含量,但与氮肥保持适当的比例,有利于蛋白质的合成.灌水与磷肥的作用相似.抗旱型小麦品种籽粒蛋白质含量较高.协调栽培环境可实现高产优质的统一.本文提供了氮、磷、水对小麦籽粒蛋白质的定量效应和品种反应的差异,以及性状与蛋白质含量的关系,为组装优质栽培技术提供了试验依据.
