目的全面了解许昌市面制食品中铝污染情况,为食品安全风险评估工作提供科学依据。方法对辖区部分市售面制食品进行抽样检测,检测方法按照国家标准GB/T5009.182—2003执行,即铬天青S比色法;卫生学评价按食品中污染物限量(GB2762-2005)铝≤100 mg/kg进行制定。结果共检测样品72份,合格47份,合格率为65.30%,其中油条合格率最低,仅为37.50%。结论本市辖区内面制食品中铝含量超标严重,源于食品加工过程中含铝添加剂的过程使用有关,应引起有关部门的高度重视,进一步加强食品安全监管力度。
Objective To understand the situation of aluminum contamination in flour products in Xuchang City comprehensively and provide a scientific basis for food safety risk assessment. Methods The samples of some commercial noodles in the area were sampled and tested according to the national standard GB / T5009.182-2003, that is, chrome azurol S colorimetry. The hygiene evaluation was based on the limit of contaminants in food (GB2762-2005) Aluminum ≤ 100 mg / kg for development. Results A total of 72 samples were tested, 47 were qualified, the pass rate was 65.30%, of which the lowest pass rate was 37.50%. Conclusions The content of aluminum in the pasta in the area under the jurisdiction of this Municipality is overweight and serious, which is caused by the process use of the additive containing aluminum in the food processing. It should be given high priority by relevant departments to further strengthen food safety supervision.
