为了进一步了解高温作业工人每日所摄取的食物是否合乎机体代谢之需要,我站于1957年9月5—10日对某食品加工厂职工进行了初步膳食调查分析,从而提出改进意见,特提供有关方面参考。该厂因是食品加工厂,对卫生工作要求的尚属严格,一般卫生工作作的较好。食堂基本上作到无蝇。膳食工作是有专人领导,管理人员、炊事人员大部分都经过卫生训练,具有一般卫生常识,并根据工作性质有明确分工,轮换负责,工作情绪很高。根据初步调查结果:了解到该食品加工厂高温作业职工每天营养素摄入量和膳食组成百分比。因而
