目的了解温州市龙湾区食品中金黄色葡萄球菌及沙门菌的污染状况,并探讨污染原因,为龙湾区由金黄色葡萄球菌及沙门菌引起的食源性疾病的可能性作出预测或预警。方法采集2013年4月-12月本地具有一定代表性的样品,共计6类540份,依据GB 4789—2010进行沙门菌、金黄色葡萄球菌的检测。结果 540份样品中检出金黄色葡萄球菌31株,沙门菌2株,总检出率为6.11%。食品类别以熟肉制品检出率最高,为11.86%,其次为凉拌菜(7.50%)、地方特色食品(鸭舌)(2.50%)。采样地点以农贸市场检出率最高,为10.00%,其次为路边摊点(6.67%)、酒店或饭店(5.00%)、学校周边移动售卖点及学校周边小餐馆(3.33%),大中型超市及冷饮店未检出。结论龙湾区市售食品存在金黄色葡萄球菌及沙门菌的污染,应加强食品卫生管理,减少食源性疾病的发生。
Objective To understand the pollution status of Staphylococcus aureus and Salmonella in food in Longwan District of Wenzhou City and to explore the causes of the pollution and to make a prediction or warning for the possibility of foodborne diseases caused by Staphylococcus aureus and Salmonella in Longwan District. Methods Samples from April to December in 2013 were collected from a total of 540 samples in 6 categories. According to GB 4789-2010, Salmonella and Staphylococcus aureus were detected. Results Of 540 samples, 31 Staphylococcus aureus and 2 Salmonella were detected, the total detection rate was 6.11%. The highest detection rate of cooked meat products in the food category was 11.86%, followed by cold salad (7.50%) and local specialty (duck tongue) (2.50%). The highest sampling rate was 10.00% at the farmer’s market, followed by roadside stalls (6.67%), hotels or restaurants (5.00%), mobile sales points around the school and diner around the school (3.33%), large and medium-sized supermarkets And cold store was not detected. Conclusion There is contamination of Staphylococcus aureus and Salmonella in commercially available food in Longwan District. Food hygiene management should be strengthened to reduce the occurrence of foodborne diseases.
