目的:通过现场流行病学调查、采集厨师、帮厨人员、食物中毒人员的大便、肛拭子、剩余食品样本进行病原学检测,调查食物中毒的原因,预防类似食源性中毒事件发生。方法:采用现场流行病学调查方法进行调查,以生化分型方法和Sensititer Autorreader微生物鉴定分析仪鉴定菌株。结果:从厨师大变样、2个病例大便样、2个病例肛拭子及1个剩余食品样(混合凉拌菜)检出奇异变形杆菌。结论:这是一起由厨师带菌引起的奇异变形杆菌食物中毒。
OBJECTIVE: To detect the etiology of food poisoning through prevention of staphylococcus aureus, stool, anal swabs and leftover food samples from chefs, kitchen assistants and food poisoning personnel through field epidemiological investigation. Methods: The field epidemiological investigation methods were used to investigate the strains. The strains were identified by biochemical typing method and Sensititer Autorreader microbial identification analyzer. Results: Proteus mirabilis was detected from a large cook change, two stool samples, two rectal swabs, and one remaining food sample (mixed salad dressing). Conclusion: This is a Proteus mirabilis food poisoning caused by the chef.
