绿豆起源于我国,已有二千余年的栽培史。我国现在是世界上种植绿豆最多的国家之一,有不少著名的优良品种,如安徽明光绿豆、河北宣化绿豆、山东绿豆和四川绿豆等。由于绿豆营养价值丰富,用途广泛,被称为“济世良谷”、“菜中佳品”。绿豆吃法多,食性好,营养价值高,深受人民群众喜爱。每100克绿豆中含蛋白质23.8克,脂肪0.5克,糖58.8克,钙800毫克,磷360毫克,铁6.8毫克,胡萝卜素0.22
