目的:了解丽水地区居民主要消费食品中食源性致病菌污染状况及分布和高危食品种类。方法:根据GB/T4789-2003对2007年~2008年度丽水地区的3大类共172份食品进行沙门菌、副溶血性弧菌、肠出血性大肠杆菌O157:H7、单核细胞增生性李斯特菌、空肠弯曲菌及金黄色葡萄球菌6种微生物项目的监测。结果:监测的6种食源性致病菌除空肠弯曲菌未检出外,其他5种微生物均有检出。生畜肉中单核细胞增生性李斯特菌和沙门菌的检出率最高,分别为17.78%(8/45)和11.11%(5/45),肠出血性大肠杆菌O157:H7检出率为2.22%(1/45)。动物性水产品中副溶血性弧菌检出率为4.82%(4/83)。即食熟制品金黄色葡萄球菌检出率为25%(5/20)。结论:在丽水地区除生食蔬菜或者蔬菜色拉外均检出沙门菌,并不同程度的检出副溶血性弧菌、肠出血性大肠杆菌O157:H7、单核细胞增生性李斯特菌和金黄色葡萄球菌,其中生畜肉中的微生物污染最为严重,其他类食品也有不同程度的致病菌污染。
Objective: To understand the status and distribution of food-borne pathogenic bacteria in the main consumer foods in Lishui area and the types of high-risk foods. Methods: According to GB / T4789-2003, 172 foodstuffs in 3 major categories of Lishui District from 2007 to 2008 were tested for Salmonella, Vibrio parahaemolyticus, enterohemorrhagic Escherichia coli O157: H7, monocyte proliferating listeria Bacteria, Campylobacter jejuni and Staphylococcus aureus 6 kinds of microbe project monitoring. Results: The six food-borne pathogens were detected except Campylobacter jejuni, and the other five kinds of microorganisms were detected. The detection rate of Listeria monocytogenes and Salmonella in live meat was the highest, which were 17.78% (8/45) and 11.11% (5/45) respectively. The detection rate of enterohemorrhagic Escherichia coli O157: H7 was 2.22% (1/45). The detection rate of V. parahaemolyticus in animal aquatic products was 4.82% (4/83). Ready-to-eat Staphylococcus aureus detection rate was 25% (5/20). CONCLUSIONS: Salmonella were detected except raw salad or vegetable salad in Lishui area. Vibrio parahaemolyticus, enterohemorrhagic Escherichia coli O157: H7, Listeria monocytogenes and golden yellow Staphylococcus aureus, of which the most serious microbial contamination of live meat, other types of food also have varying degrees of pathogenic bacteria contamination.
