研究水的pH值和总硬度对黑豆种子萌发及其芽苗菜品质的影响,结果表明,pH值为5.5和6.0、水的硬度值为25度的处理液处理的种子,发芽率、发芽势、发芽指数、芽苗菜平均株高和生物产量均较高,且相比其他处理液均差异显著。种子经不同处理液浸种后,其相对吸水量差异并不明显。不同处理对芽苗菜蛋白质含量的影响也无显著差异。
The effects of water pH and total hardness on the germination of black beans and the quality of their sprouts were studied. The results showed that the germination rate and germination potential of seeds treated with pH 5.5 and pH 6.0 and water hardness 25% , Germination index, average shoot height and biomass of sprouts were higher than those of other treatments. After the seeds were soaked in different treatment solutions, the relative water absorption difference was not obvious. The effects of different treatments on the protein content of sprouts were also not significantly different.
