据清朝中期史料上记载:宫廷所设清真大型宴会都由天津鸿宾楼供奉。天津卫是清真菜的发扬地,是津门厨师的福地,也是名厨辈出的城市。每当谈起天津的菜品,必先谈到津门清真菜名厨,在数十年间,人们不仅口头上有不少传说,盛赞天津清真菜的文化内涵,更称颂津门名厨的传闻。
According to the Qing Dynasty mid-term historical records: the court set up a large-scale halal banquet courtesy of Tianjin Hong Bin House.
