啤酒是用大麦芽、酒花、大米等为原料,经醣化发酵而酿制成的一种富有营养的大众化饮料酒.据分析,啤酒中含有5%的碳水化合物,1.5~4.5%酒精,0.4%的二氧化碳,0.5%的蛋白质,此外还含有无机盐钙、磷、铁和多种维生素.一九七二年七月一日,在墨西哥召开的世界营养食品会议上,啤酒被各国医学家宣布为“营养食品”,会议规定,营养食品需具备三个条件:含氨基酸丰富,发热量大,所含的营养成分绝大部分能被人体吸收利用.
