盒饭是指集中加工、分装、分送的盒装主食和菜肴。根据加工工艺,分为:冷藏盒饭:指主食和菜肴烧煮后充分冷却(在2 h内须使中心温度降至10℃以下),并在中心温度10℃以下条件分装、贮存、运输,食用前须加热至中心温度不低于70℃的盒饭。加热保温盒饭:指主食和菜肴烧煮后加热保温,在食用前中心温度始终保持在60℃以上的盒饭。根据食用人群分为:学生盒饭:指配送给中小学校供学生食用的盒饭。社会盒饭:指供应除中小学校学生以外的人群食用的盒饭。
