模拟菜肴烹饪过程中原材料在锅具驱动力作用下的运动演变过程,将锅内固态原材料看做是由大量颗粒组成的集合体,而将锅内处于液态的油水混合物的作用看作是颗粒之间的液桥力,并用离散元方法逐步推演出每个原材料颗粒随时间进程在空间中的运动轨迹。以二自由度自动烹饪机械作为实验平台,通过模拟/视频对比方式直接验证了上述运动模拟方法的可行性,而后分析了这种机械在不同的控制时间序列下锅内原材料定量化描述的运动效果,间接验证了该模拟方法的有效性。
In the course of simulating the movement of raw materials under the driving force of the cookware during cooking process, the solid raw material in the pot is regarded as an aggregate composed of a large number of particles, and the role of the oil-water mixture in the liquid state in the pot is regarded as a pellet Liquid bridge between the force and discrete element method stepwise deduced each raw material particles with the passage of time in space motion trajectory. Then the kinematic effect of the quantitative description of raw materials in the pot under different control time series was analyzed , Indirectly verify the effectiveness of the simulation method.
