一、蘑菇生长的营养需求实验室中,双孢蘑菇的菌丝能在以葡萄糖为碳源、谷氨酸为氮源、无机盐作矿质营养及硫胺素(B)和生物素(H)为维生素源的基质上生长,但不能形成子实体。在经过堆制的培养料中,却能很好地形成子实体。这说明蘑菇生长的营养要求是十分复杂的。培养料中的成分较复杂,有纤维素、半纤维素和木质素以及矿质元素、维生素等,在堆制过程中发生了变化,形成了有利于蘑菇生长的物质,如微生物量、微生物多聚糖、木质素一蛋白质复合体、木质素—腐殖质复合体以及一些尚未被人们所认识的化合物。
