一般来说多数细菌“怕”盐,在盐渍的食品中很难生存。但也有不怕盐的细菌,如“副溶血性弧菌”就恰恰喜欢含盐的环境。因此,有人把这类细菌统称为“嗜盐性弧菌群”(简称“嗜盐菌”)。嗜盐菌广泛存在于含有一定盐分的海水、海底部沉积物及海产食品中(如海鱼、海虾、海蟹及贝类),在冷荤食品如腌鸡、猪头肉等卤菜中也极易生长繁殖。
