矿物质在人的生命活动中起着举足轻重的作用,人体对矿物质的吸收和利用情况也会受到多方面因素的影响。就影响人体对食品中矿物质的因素及主要研究方法进行了综述。主要总结了钙(Ca)、铁(Fe)、锌(Zn)3种矿物元素在人体内的主要生理作用,介绍了促进和抑制影响食品中矿物质可吸收性的因素以及评价食品中矿物质生物利用率常用的体外消化(invitro)和活体(invivo)研究的主要方法。
Minerals play a decisive role in the life activities of human beings. The absorption and utilization of minerals by the human body will also be affected by many factors. The factors influencing the human body on the minerals in food and the main research methods are reviewed. The main physiological roles of three kinds of mineral elements (Ca, Fe and Zn) in human body are summarized. The factors that promote and inhibit the absorbability of minerals in food are introduced, The main methods of in vitro invitro and in vivo (invivo) studies commonly used for bioavailability.
