Lactobacillus reuteri能转化甘油为一个潜在的细胞生长抑制剂,取名为reuterin,它能抑制许多革兰氏阳性和阴性细菌,以及酵母、真菌和原虫。用半制备色谱技术进行分离纯化,得到了reuterin纯品。利用傅利叶转换红外光谱法和液相色谱-质谱法,可以确定reuterin的分子量为148,分子里存在功能基因C-O(伸展,1050至1150cm~(-1))、羟基(广,3450cm~(-1))以及醛基(1730cm~(-1),典型)。以核磁共振谱技术研究reuterin纯品(以D_2O为溶剂),证明在水溶液里同时存在
Lactobacillus reuteri transforms glycerol into a potential cytostatic agent called reuterin, which inhibits many Gram-positive and -negative bacteria, as well as yeast, fungi and protozoa. Separation and purification using semi-preparative chromatography technology, reuterin pure product was obtained. Using Fourier transform infrared spectroscopy and liquid chromatography-mass spectrometry, we found that the molecular weight of reuterin is 148, and the functional genes CO (stretch, 1050 to 1150 cm -1), hydroxyl (3450 cm -1 )) And aldehyde groups (1730 cm -1, typ).
