食物血糖生成指数,英文简称为GI,指的是人体食用一定量食物后会引起多大的血糖反应。要测定食物的GI值,首先要找一组健康志愿者,在早晨空腹情况下,吃进含有50g碳水化合物的食物,然后每隔15~30分钟测定一次血糖,直到2个小时。以同一组人吃进50g葡萄糖后的血糖变化为100%,计算和比较出各种食物的GI值。一种食物的GI值至少有7个人进行同样的实验才能得出,因此,这是一个食物的生理学参数,比较
