民以食为天,饮食文化是民族文化的基础,日本民族饮食结构的杂食性,饮食方式的艺术性,对健康理念的独到之处,及崇尚自然的环保意识,构成了日本独特的饮食文化。日本的清酒、料理及食物的制作、调味技艺,均有独到之处,本文从日本饮食的生鲜特色、制作考究及用歺礼仪等方面研究日本饮食文化,从而研究日本人的民族性格、民族认知特点及民族文化,揭示日本民族追求精致完美及节俭、内敛的民族传统。
Food is the world, the food culture is the basis of national culture, the Japanese national diet structure omnivorous, the artistic style of eating, the uniqueness of the concept of health, and respect for nature’s environmental awareness constitute Japan’s unique food culture. Japan’s sake, cooking and food production, seasoning skills, are unique, this article from the Japanese fresh features of diet, etiquette and use of cereal etiquette and other aspects of Japanese food culture, in order to study the Japanese national character, ethnic Cognitive characteristics and national culture, reveals the pursuit of exquisite Japanese refined and thrifty, introverted national tradition.
