苯酚具有氧化作用,稻谷浸泡在稀苯酚溶液中一段时间后,有的稻谷的谷壳颜色会发生变化,谷壳颜色的变化与否及变化程度因所用品种而异.一般而言,籼稻的谷壳会变成暗褐色,而粳稻的则不变色.酚反应不仅能作为税粳稻鉴别的指标之一,还可作为稻种分类及遗传变异研究的一个指标.前人对稻种的酚反应已进行过一定范围的研究,证明酚反应是受水稻第11染色体上的一个主效基因(Ph=Bh- C)所控制的,但对云南稻种资源的酚反应调查还不多.本鉴定目的在于通过对云南地方稻种酚反应的调查,研究云南稻种的酚反应特性,为云南稻种的分类和遗传变异的系统化全面研究作一方面的补充.

In order to investigate the phenolic reaction characteristics of Yunnan rice varieties through the investigation of the phenolic response to rice in Yunnan Province, the systematic and comprehensive study on the classification and genetic variation of Yunnan rice varieties was made.
