对葡萄主梢及时合理摘心是其栽培管理过程中重要的栽培技术之一。为了解决香格里拉当地种植农户对葡萄主梢摘心不及时合理的问题,本研究以当地主栽品种‘赤霞珠’为试验材料,以农户栽培管理葡萄为对照,研究了主梢不同留叶数摘心对果实品质的影响,并进行了方差分析。结果表明:在结果枝留4,5,6,7或8片叶摘心时,与对照相比,果实总糖、总酚、花色苷含量及糖酸比均有显著增加,酸度降低。其中,在结果枝留6片叶摘心的条件下,葡萄果实总糖、总酚含量及糖酸比、p H值均达到最高,酸度最低,平均穗重与株产较为合理;当果穗以上留叶数量为4,5片摘心时,果实品质较留6片叶较差,具体表现为总糖含量、酚类物质和产量较低,酸度高,果实成熟晚;留7,8片叶摘心,果实成熟虽早,产量也高,但品质表现较差。因此,为进一步提高葡萄原料产品质量可在结果枝留6片叶及时进行摘心。
