黄酮是多羟基,多苯环的大分子有机化合物,具有多种生物活性功能,其中抗氧化作用尤为明显。通过邻苯三酚自氧化法、水杨酸法比色法分别测定了苦荞麦苗期的黄酮类化合物清除超氧阴离子自由基(O2-·)以及羟基自由基(·OH)的效果。结果表明,不同浓度的苦荞麦苗黄酮类化合物能显著地清除超氧阴离子自由基和羟基自由基,且随着苦荞麦苗黄酮类化合物浓度的升高其抗氧化性作用逐渐增强,并在一定浓度范围内黄酮化合物与抑制率呈正相关。
Flavonoids are polyhydroxy, polycyclic macromolecular organic compounds, with a variety of biological activity, of which the antioxidant effect is particularly evident. By pyrogallol autoxidation and salicylic acid colorimetric method, flavonoids in tartary buckwheat seedling were respectively scavenged by superoxide anion (O2-) and hydroxyl radical (· OH). The results showed that different concentrations of flavonoids of tartary buckwheat seedling could significantly remove superoxide anion radical and hydroxyl radical, and the anti-oxidative effect gradually increased with the increase of the concentration of flavonoids in tartary buckwheat seedling, Concentration of flavonoids and inhibition rate was positively correlated.
