花生蛋白质乳状液,及其经等电聚焦,或用硫酸铵分级分离后,分别进行SDS-PAGE,结果都显出18条比较明显的区带.这18条区带在凝胶柱上的分布情况可自然地分成A,B,C,D4个区域.其中A1,B1,B2,B3,C3,C4,C6,D8等8条区带,在不同等电点蛋白质,不同饱和度的硫酸铵所沉淀的蛋白质,以及乳状液中的蛋白质,都共同显出的主要区带.它们的分子量分别是0.40,2.8,3.4,3.8,5.2,5.4,5.6,7.8万.这8条区带的蛋白质亚基或肽链可能是构成花生蛋白主要组成的亚基或肽链.由于A1区带比较细小,而D3区带在不同等电点、不同饱和度硫酸铵所沉淀的蛋白质中差异比较明显,因此,B1,B2,B3,C3,C4,C6等6条区带的蛋白亚基或肽链是构成花生球蛋白的主要亚基或肽链;而D3区带的蛋白亚基可能是伴花生球蛋白的一种组成.

The protein subunits or peptide chains of these eight bands may be subunits or peptide chains that make up the major component of peanut protein. As the A1 zone is relatively small, and the D3 zone is at different isoelectric point, the difference between the proteins precipitated by ammonium sulfate with different saturation is obvious. Therefore, the bands of B1, B2, B3, C3, C4 and C6 Protein subunits or peptide chains constitute the major subunit or peptide chain of peanut globulins; while the protein subunits of D3 band may be a component of peanut globulin.
