[目的 ]阐明刺莓果中抗氧化物含量及稳定性 .[方法 ]用格氏试剂比色法测定了在室温保存不同时间的刺莓果中总抗氧化物含量 .[结果 ]每 10 0 g刺莓果中抗坏血酸含量为 70 2mg ,过 6个月后降至 6 17mg ,下降 85mg(12 .1% ) ;总抗氧化物含量为 6 0 80mg ,6个月后降至 5 970mg ,下降 110mg(1.8% ) .[结论 ]刺莓果中起抗氧化作用的主要成分 ,除抗坏血酸以外还有未知物质 ,其稳定性优于抗坏血酸
[Objective] To clarify the content and stability of antioxidants in thorn berry. [Method] The content of total antioxidants in thorn berries stored at room temperature for different time was determined by Grignard reagent colorimetry. [Results] Every 10 0 The content of ascorbic acid in G. jasminoides was 70 2 mg, which decreased to 6 17 mg after 6 months and decreased by 85 mg (12.1%). The total antioxidant content was 6 0 80 mg and it dropped to 5 970 mg after 6 months. 110mg (1.8%). [Conclusion] The main antioxidant component of thorny berries, with the exception of ascorbic acid, is unknown and its stability is superior to that of ascorbic acid.
