目的为修订冷冻饮品卫生标准、增加霉菌检测项目提供科学依据。方法样品经稀释后分3大类,按照GB4789.15-2010中食品卫生微生物学检验霉菌和酵母计数检验方法进行检测。结果对所采样品冰棒、雪糕等共650份进行霉菌检验,共检出霉菌270份,分离得到377株,主要菌相为青霉,共153株,其次分别为曲霉137株、毛霉77株、根霉10株。结论霉菌不仅可在低温(-10℃)下生长,而且还能较快地发育、繁殖,并产生毒素。
Objective To provide a scientific basis for the revision of hygienic standards of frozen drinks and increase of mold testing items. Methods Samples were diluted into three categories, according to GB4789.15-2010 food hygiene microbiology test mold and yeast count test method for testing. Results A total of 650 samples of popsicles, ice cream and so on were collected and tested for mold. A total of 270 molds were isolated and 377 strains were isolated. The main fungi were Penicillium, a total of 153 strains, followed by Aspergillus 137 and Mucor 77 , Rhizopus 10 strains. Conclusion Mold not only grows at low temperatures (-10 ° C) but also develops, reproduces and produces toxins faster.
