High-performance liquid chromatography (HPLC) was used to analyze the soluble sugar components extracted from five kinds of raw and hot Filipino sweet potato tubers by 70% ethanol. Unlike beans, the content of indigestible oligosaccharides in sweet potatoes is extremely low, which is not enough to cause flatulence associated with sweet potato as the staple food.
